Never been to the north land, never have seen a penguin, but am fascinated by them.  When I saw this background with them, I just had to use it!  It is winter, after all, even though it sure doesn't feel like it.

Good Monday morning from a wet, soggy, grey day in Tennessee, and more to come.  A couple in my church moved to Denver, Co. for about a year, but are back home and sat behind me in church yesterday.  I asked them if they preferred the 70 degree weather here, or would they prefer the -6 degree temps in Denver.  They chose Denver, because at least they had blue skies and sunshine and they could stand the snow and cold for that.  I had to agree.  These grey days are depressing to say the least.

I have the day off.  No games, no shopping, nothing.  Well, having said that, I regress.  My son wants me to do some printing for him, such as menus, etc. and will come over in a couple of hours to give me the information.  But still, I can stay home and do that and will make the day go by faster.

I am still feeling good and am still thanking my Lord for taking care of me once again.

I found this recipe on Pinterest and am going to make it today.  I have a new neighbor that moved in over the weekend, and thought if it turned out pretty good, I would make and take to them.  If it were any easier, I doubt I could handle making it!  lol



Mix together by hand until moist. Be sure not to over stir. Bake in a 9x13 cake pan at 350 degrees until golden brown on the top (about 20 minutes). Cool completely before eating. As they are cooling, you can sprinkle with powder sugar if you wish (Which I guess technically makes this a 3-ingredient recipe).They have more of an angel food cake texture than a traditional lemon bar texture.

  1. Those look really good! I love all the easy and yummy things you can make with Angel Food cake mixes! I did one with crushed pineapple. Amazingly good. Let us know how it turns out, please! So happy you are still feeling good, and have a day to stay in. We have sunshine, now that the fog has burned off. Too hot for January, but I'll take it over snow any day.

  3. It's cold & grey here too! We had a warm-up (60's) over the weekend though that was awesome! Just got to take what we are given....and look forward to spring.
    That dessert sounds yummy. I love lemon anything. I'm writing this one down to try.

  4. It's quite bitter cold today but the sun is shining making it appear warmer and it does give heat through the window. I'm warming the car up right now and peeked in. Glad you are able to get to church again .

    I missed the penguin background. It's red today.
    Have you ever seen that documentary/movie on penguins that tells of their migration and survival? "The March of the Penguins" They are amazing creatures.

  6. It's nice to have a day where there is nothing on the schedule!! The recipe sounds so yummy! I have an angel food cake recipe that I found on Pinterest that I want to try but when I went to the store, they were all out of angel food cake mix.
