Today is my pay day and of course my tithe will be taken out first, then bills will be paid, then prescriptions will be filled and and the only thing I have left to purchase is a larger liter box, leaving me with maybe a dollar or two to last for the next month. Gotta luv retirement! We got a raise in our social security but we also got a raise in our medicare insurance premium and it didn't even out. I now draw less than I did for the past few years and having paid into the system for 46 years, I have a little resentment. But..........everything is ok, I have a roof over my head, a warm bed to sleep in, and food to eat. So many in this world do not have half of what I do, and I am thankful.
I have told you previously that I don't like to cook and that Jim is the cook in this house. Well, after retiring this past Friday, he got a wild hair to cook something that was in my Southern Living Magazine....Pork with apples, bacon and sauerkraut. In the recipe you can choose to use bacon or pancetta and he chose the latter. The meat was fabulous, but you can have the cream cheese and spinach, the rosemary, bay leaves, sauerkraut and whatever else was in there.....:-)
The Southern Living version!
Jim's version!
Gotta get on my horse and ride, as I have places to be, and things to get done.
Have a wonderful day!
Hi, sweet Linda, had a few minutes so wanted to check in and see how you are doing. Looks like you are busy as usual. I am glad you enjoyed the meat in that dish. Sounds like quite a mixture of stuff to me. :) Hope you are feeling a lot better my friend. Hugs and blessings!
ReplyDeleteI know what you mean about retirement. When Bob retired 2 yrs ago we calculated our expenses vs. his retirement pay and thought, "oh, we can do this". I'm drawing now and it's so small it helps, but just barely. I'm resentful too.
ReplyDeleteJim's dinner looked very good, but I must admit the southern version looks better. Sorry Jim. I'm sure it was delicious. :)
I agree with you all that Jim's, though it looks good, is not quite ready for a photo in a magazine! God bless him for cooking, though. Joe does not cook. Period. His older brother does, but not Joe.
ReplyDeleteOne step forward and two back, Linda. Until we can get a sensible person back in the White House....
Gotta love our government!!
ReplyDeleteTimes can be pretty rough now a days but I too just think at least we have a roof over our head and food for our bellies.
I wish Walt loved cooking! That sounds like an amazing dish. That would make for a great Sunday dinner.
ReplyDeleteWalt and I are planning for our retirement and it scares us to think where social security will be when our day arrives to retire. He has been putting extra away from his pay check each week into our retirement plan and there are days when I wish he wasn't taking so much out of his check but I know that it will be worth and I'll be happy that we did once we are retired.
Have a great weekend, Linda!
