
I will take Jim to the Coumadin Clinic for testing at 11:30 and then I am taking my granddaughter to her volleyball game. The game is at 4, but the team has to be there at 3:15, she gets out of school at 2:25 and is on the mountain top, totally across town. Cant you just see this little old lady, driving like a race car driver to get her there! lol
I know it isn't fall yet but with the weather we have had this summer, it makes me wonder if it isn't coming faster than normal. I found the following in The Old Farmer's Almanac.............

The equinox brings autumn on September 22 at 10:29 P.M EDT. The word equinox comes from the Latin words for "equal night." The fall and spring equinoxes are the only days of the year in which the Sun crosses the celestial equator. From here on out, the temperatures begin to drop and the days start to get shorter than the nights.
There's an old weather proverb that states, "If autumn leaves are slow to fall, prepare for a cold winter." Or perhaps you just haven't had the kind of wind or rain needed to shake the leaves loose from their branches. But look on the bright side—you get to look at the beautiful autumn foliage for a little bit longer!
As harvest is not long off, here is a recipe to end the summer..............
Corn Cakes!
- 2 eggs, beaten
- 1/4 cup flour
- 1/4 teaspoon salt
- pepper, to taste
- 2 cups uncooked corn, cut from the cob (or 10 oz. frozen corn kernels, thawed)
- 1/2 cup chopped scallions
- 1/3 cup diced red bell pepper
- 1 tablespoon corn oil
- sour cream
- salsa
In a large bowl, mix all ingredients except the last three. Heat a skillet and grease with the oil. Drop mixture by spoonfuls into the skillet, making individual cakes about 3 inches across. Cook 2 or 3 minutes on each side, just until golden. Serve with sour cream and salsa.

We don't have a hint of Fall here, yet, but nothing unusual about that for central Florida.

DeleteAbout Autumn, all I know is, the more than ample rain should almost guarentee that we'll have a pretty fall. The leaves should be showy this year.
ReplyDeleteCorn Cakes!? And I'm on a low carbo diet now. Bad girl!!! [lololol] I also enjoy the warm, sweet aromas of baking Banana Nut Bread, my husband's mouth-watering Corn Bread, and Blue Berry Muffins. [drool] I gotta quit or the diet is gonna fall by the wayside ... :)))
